  • 4 cups mixed greens (like romaine, spinach, and kale) Fresh, crispy greens.
  • 1 cup cherry tomatoes, halved Add vibrant color and sweetness.

Dressing Ingredients

  • 1/2 cup Greek yogurt or halāl-friendly sour cream Creaminess for the dressing.

Preparation

  • Wash the mixed greens under cool water and spin them dry in a salad spinner or pat them dry with a clean kitchen towel.
  • Halve the cherry tomatoes, dice the cucumber, and slice the avocado. Try to cut the vegetables roughly the same size for uniformity in presentation.

Dressing

  • In a large mixing bowl, combine the Greek yogurt (or sour cream), olive oil, lemon juice, salt, and pepper. Whisk until smooth and creamy, adjusting seasoning to taste.

Tossing and Serving

  • In the bowl with the dressing, add all of the prepared veggies: mixed greens, cherry tomatoes, cucumber, avocado, green onions, basil, and parsley. Gently toss until everything is evenly coated.
  • Transfer the salad to a large serving bowl or plate it individually. Enjoy immediately.

Notes

Substitutions like plant-based yogurt can be used. Assemble just before serving for the freshest taste. Avoid overdressing to keep the salad crisp.
