Ingredients

  • 1 pound fresh green beans, trimmed Opt for vibrant, firm green beans for the best texture and flavor
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled Luscious and creamy

For the dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard

Preparation

  • Bring a pot of salted water to a boil. Add the trimmed green beans and cook for about 3-4 minutes until they are bright green and tender-crisp.
  • Immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain and set aside.

Dressing

  • In a small bowl, whisk together the olive oil, lemon juice, and Dijon mustard. Season with salt and pepper according to your taste preference.

Combine Ingredients

  • In a large bowl, add the green beans, halved cherry tomatoes, and crumbled feta cheese.
  • Drizzle the dressing over the salad and toss gently to combine all the flavors.

Notes
