Ingredients
  

For the Marinade

  • 1 lb chicken breast, cut into cubes Use boneless, skinless chicken breast for best results.
  • 1/4 cup olive oil Extra virgin olive oil is recommended.
  • 2 tablespoons lemon juice Freshly squeezed for optimal flavor.
  • 3 cloves garlic, minced Add more for a stronger garlic flavor if desired.
  • 1 tablespoon dried oregano Can substitute with fresh oregano if available.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Skewers

  • 1 bell pepper cut into squares Any color bell pepper can be used.
  • 1 onion cut into squares Red or white onion works well.
  • 8 pieces Skewers (wooden or metal) If using wooden skewers, soak in water prior to grilling.

Preparation

  • In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  • Add the chicken cubes to the marinade and mix until every piece is well-coated. Cover and let it marinate in the fridge for 30 minutes.
  • If using wooden skewers, soak them in water for 15-20 minutes to prevent burning.

Assembly and Cooking

  • Thread marinated chicken, bell pepper squares, and onion squares onto the skewers, alternating for a colorful presentation.
  • Preheat your grill to medium-high.
  • Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through with nice grill marks.

Serving

  • Remove from the grill, let them rest for a few minutes, then serve hot.
  • Add a drizzle of lemon juice or a side of tzatziki for extra flavor.

Notes

For substitutions, consider using halal ground beef or lamb. Marinate for longer if you can (up to overnight) for maximum flavor. Monitor the grill to avoid overcooking the chicken, aiming for an internal temperature of 165°F. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
