Ingredients
  

For the Marinade

  • 1/4 cup olive oil
  • 1/4 cup lemon juice Freshly squeezed is best.
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Kabobs

  • 2 lbs chicken breast, cut into cubes Use boneless chicken breasts for tenderness.
  • 1 bell pepper cut into squares Any color of bell pepper will work.
  • 1 red onion cut into squares
  • Wooden or metal skewers Soak wooden skewers in water for 30 minutes before grilling.

Preparation of Marinade

  • In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper until well combined.

Marinate the Chicken

  • Add the chicken cubes to the marinade, ensuring each piece is coated evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour, or up to 4 hours.

Prepare the Veggies

  • Wash and cut the bell pepper and onion into squares.

Assemble the Skewers

  • Alternate threading the marinated chicken, bell peppers, and onions onto the skewers until all ingredients are used.

Grill the Kabobs

  • Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through.

Serve

  • Remove the kabobs from the grill and let them rest for a few minutes. Serve with tzatziki or your favorite sauce.

Notes

For substitution ideas, feel free to try beef or lamb instead of chicken. To store leftovers, keep in an airtight container for up to three days or freeze for up to three months.
