Ingredients
  

For the Marinade

  • 1 pound chicken breast, cut into cubes
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Kabobs

  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks

Instructions
 

Marination

  • In a medium mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the chicken cubes and mix well, ensuring every piece is coated in that zesty marinade. Let it rest for at least 30 minutes in the refrigerator for better flavor absorption.

Prep Ingredients

  • While your chicken is marinating, chop the red and green bell peppers and red onion into large, even pieces.

Skewering

  • Once marinated, it’s time to assemble your kabobs! Take skewers and alternate threading the chicken and veggies until you run out of space.

Cooking

  • Preheat the grill to medium-high heat or set the oven to broil.
  • Place the assembled kabobs on the grill or under the broiler. Cook for about 10-15 minutes, turning occasionally until the chicken is fully cooked and nicely charred.

Serving

  • Remove the kabobs from the grill, let them rest for a few minutes, then serve them hot with your favorite sides or dipping sauces.

Notes

For a variation, swap in other veggies or proteins like zucchini, cherry tomatoes, turkey, or halal beef. To prevent dryness, ensure not to overcook the chicken and check for an internal temperature of at least 165°F (75°C).
