Ingredients
  

For the Chicken Marinade

  • 1/4 cup olive oil Extra virgin olive oil is preferred for flavor.
  • 2 pieces lemons (juice) Juice the lemons for the marinade.
  • 1 piece lemon (zest) Grate the zest before juicing.
  • 3 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 teaspoon dried oregano Can substitute with fresh oregano.
  • to taste salt Adjust based on personal preference.
  • to taste pepper Freshly ground black pepper is recommended.
  • 4 pieces boneless, skinless chicken breasts Make sure they are even for consistent cooking.

For Serving

  • 1 cup crumbled feta cheese Add in the last minutes of cooking.
  • 1/4 cup fresh parsley, chopped For garnish.
  • as desired cherry tomatoes Optional garnish.
  • as desired olives Optional garnish.

Instructions
 

Marination

  • In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  • Add the chicken breasts and coat them well with the marinade. Allow the chicken to marinate for at least 15 minutes.

Cooking

  • Preheat the grill or a skillet over medium-high heat.
  • Once hot, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  • In the last few minutes of cooking, sprinkle crumbled feta cheese over the chicken to melt slightly.

Serving

  • Once cooked through, remove the chicken from the heat and garnish with fresh parsley, cherry tomatoes, and olives.
  • Serve hot and enjoy!

Notes

Allow the chicken to marinate longer for more flavor. For an alternative, use goat cheese instead of feta.
