  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 large lemons (juice)
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish Optional garnish

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Place chicken breasts in a resealable bag, pouring the marinade over them. Seal and let it marinate for at least 30 minutes (or overnight in the fridge for more flavor).
  • After marination, take the chicken out of the bag and arrange it in a baking dish. Pour any leftover marinade over the chicken.
  • Sprinkle crumbled feta cheese evenly over the top of the chicken.
  • Bake in the preheated oven for about 40-45 minutes. The chicken should reach an internal temperature of 165°F (75°C), and the cheese will become bubbly and slightly golden.
  • Once done, take it out of the oven and let it rest for a few minutes. Garnish with fresh parsley, slice, and enjoy with your favorite side dishes!

Notes

Substitutions for feta can include goat cheese or a dairy-free alternative. Always check the internal temperature to avoid overcooking.
