Ingredients
  

For the crust

  • 1 cup Graham cracker crumbs Use finely crushed graham crackers.
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted Should be fully melted.

For the filling

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh grapefruit juice Strain if necessary.
  • 1 tablespoon grapefruit zest Freshly grated.
  • 1/4 cup all-purpose flour
  • A pinch of salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the Graham cracker crumbs and sugar. Stir in the melted butter until fully incorporated. Press the mixture firmly into a greased 8×8-inch baking pan to form an even crust.
  • Bake the crust for 10 minutes, or until lightly golden. Remove from the oven and let it cool slightly.

Making the filling

  • In a separate bowl, whisk together the eggs and sugar until combined.
  • Add in the grapefruit juice, zest, flour, and a pinch of salt. Mix until just combined, being careful not to overmix.
  • Pour the filling over the pre-baked crust.
  • Return to the oven and bake for 25-30 minutes, or until the filling is set and slightly jiggles in the center.

Cooling and Serving

  • Once baked, remove the bars from the oven and allow them to cool completely in the pan.
  • After cooling, slice them into squares and dust with powdered sugar if desired.

Notes

Use fresh grapefruit juice and zest for the best flavor. Don't overbake, as it can result in a dry filling. Chill before slicing for cleaner cuts. Store in an airtight container in the refrigerator for up to four days or freeze for up to three months.
