  • 1 cup rolled oats Use rolled oats for better texture.
  • 1 cup boiling water To soak the oats.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  • In a bowl, combine the rolled oats and boiling water. Let it sit for about 20 minutes to soften.
  • In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  • Add the softened oats to the wet ingredients and stir until combined.
  • In another bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon.
  • Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix!

Baking

  • Pour the batter into the prepared baking pan and smooth the top.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cooling and Serving

  • Once baked, let the cake cool completely before adding your favorite cream cheese frosting or simply dusting with powdered sugar.

Notes

Store in an airtight container at room temperature for about 2 days. For longer storage, wrap tightly and refrigerate for a week or freeze in slices for up to 3 months. Thaw at room temperature or microwave for a few seconds before serving.
