Grandma’s Fluffy Cinnamon Sugar Donut Muffins

A delightful cross between a muffin and a donut, these fluffy treats are coated in cinnamon sugar and make for an irresistible dessert.

Ingredients
  

For the Muffin Batter

  • 2 cups all-purpose flour Standard all-purpose flour
  • 1 cup granulated sugar For the batter
  • 1 tablespoon baking powder Leavening agent
  • ½ teaspoon salt Enhances flavor
  • ½ teaspoon ground cinnamon For the batter
  • 2 large eggs Room temperature preferred
  • 1 cup milk Room temperature preferred
  • ½ cup vegetable oil Can substitute with melted butter
  • 1 teaspoon vanilla extract Adds flavor

For the Cinnamon Sugar Coating

  • ½ cup granulated sugar For coating
  • 1 tablespoon ground cinnamon For coating

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin with non-stick spray or line it with muffin liners.
  • In a large mixing bowl, whisk together the flour, 1 cup granulated sugar, baking powder, salt, and ½ teaspoon of cinnamon until well combined.
  • In another bowl, whisk the eggs, milk, vegetable oil, and vanilla extract until blended.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are just fine!

Baking

  • Use a spoon or an ice cream scoop to fill each muffin cup about ¾ full with the muffin batter.
  • Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

Finishing Touches

  • While the muffins are baking, mix the remaining ½ cup of sugar and 1 tablespoon of cinnamon in a bowl.
  • Remove the muffins from the oven and let them cool for about 5 minutes. Then, while they’re still warm, roll them in the cinnamon sugar mixture until completely coated.
  • Let the muffins cool slightly before enjoying them warm with a cup of tea or coffee.

Notes

Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Reheat in the microwave for 15-20 seconds to enjoy fresh flavors.
