  • 2 cups Canned Sweet Corn, drained Fresh corn can be used for better sweetness and texture.
  • 2 large Eggs, beaten
  • 1 cup Milk
  • ¼ cup Sugar (optional, adjust to taste) Experiment with the amount of sugar based on taste preferences.
  • ½ cup Cornmeal
  • 1 teaspoon Salt
  • 2 tablespoons Butter, melted For greasing the baking dish.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the drained sweet corn, beaten eggs, milk, sugar, cornmeal, salt, and melted butter. Mix until well combined.
  • Grease a 9x9 inch baking dish with butter or cooking spray.
  • Pour the corn mixture into the prepared baking dish.
  • Bake for about 40-45 minutes or until the top is golden brown and the pudding is set.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Serve warm for the best flavor. Can store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
