Gourmet Mediterranean Spinach Grilled Cheese

Ingredients
For the Sandwich
- 2 slices slices of bread (your choice: sourdough works great)
- 1 cup fresh spinach, chopped Make sure to wash and chop your spinach beforehand
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup feta cheese, crumbled (optional) Can substitute with other cheese
- 2 tablespoons olive oil For grilling and sautéing
- 1 clove garlic, minced Adds flavor to the spinach mixture

Instructions
Prepare the Spinach Mixture
- In a small skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the minced garlic and sauté until fragrant (about 30 seconds).
- Next, add the chopped spinach and a pinch of salt and pepper. Cook until wilted (about 2-3 minutes). Remove from heat and stir in the mozzarella and feta cheeses.
Assemble the Sandwich
- Take your slices of bread and spread a thin layer of olive oil on one side of each slice.
- On the non-oiled side, generously spoon the spinach-cheese mixture onto one slice.
Grill It
- Top with the second slice of bread, oiled side facing out.
- Heat a skillet over medium heat and add the sandwich. Grill until the bread is golden brown, about 3-5 minutes, then flip and repeat until the other side is perfectly crisp and the cheese is melted.

- Once both sides are crispy and golden, take it off the heat, slice it in half, and let your taste buds rejoice!
