Ingredients
  

Meat

  • 1 lb ground beef (or turkey for a leaner option)

Aromatics

  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Liquids

  • 2 cups beef or vegetable broth
  • 1 can (15 oz) diced tomatoes

Pasta

  • 2 cups elbow macaroni

Spices

  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper

Toppings

  • 1/4 cup shredded cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Preparation

  • In a large pot over medium heat, add the ground beef (or turkey). Use a wooden spoon to break it apart and brown it until fully cooked, about 5-7 minutes.
  • Once the meat is browned, add in the chopped onion and minced garlic. Sauté for another 2-3 minutes until the onions are translucent and fragrant.
  • Pour in the beef broth, diced tomatoes, and add the elbow macaroni. Stir to combine all the ingredients together.
  • Sprinkle in the paprika, oregano, salt, and pepper. Stir well and bring the mixture to a gentle boil.
  • Reduce the heat to low and cover the pot. Let it simmer for about 10-12 minutes, or until the pasta is cooked and tender.
  • After it’s cooked to perfection, remove from heat, and serve hot. Top with shredded cheese and a sprinkle of fresh parsley if desired!

Notes

Feel free to swap ground beef for ground turkey or omit the meat entirely for a delicious vegetarian version. Make sure to keep an eye on the pasta; no one likes mushy noodles! Stir the mixture occasionally to prevent the pasta from sticking and ensure even cooking. If you have leftovers, transfer cooled goulash into airtight containers. It can be refrigerated for up to 3-4 days or frozen for 2-3 months.
