Ingredients
  

For the filling

  • 2 cups fresh peaches (peeled, pitted, and chopped)
  • ½ cup sugar adjust based on sweetness preference
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch

For the crust

  • 1 package ready-made pie crusts or homemade if you prefer
  • Vegetable oil for frying
  • Powdered sugar for dusting, optional

Instructions
 

Preparation

  • In a medium bowl, mix together the chopped peaches, sugar, lemon juice, cinnamon, and cornstarch. Allow this mixture to sit for about 10 minutes.
  • Roll out the dough on a lightly floured surface to about ¼ inch thickness.
  • Use a round cutter or a bowl to cut out circles from the dough, about 4-5 inches in diameter.
  • Place a spoonful of the peach filling in the center of each dough circle.
  • Fold the dough over the filling to create a half-moon shape and use a fork to crimp the edges.
  • Heat about 2 inches of vegetable oil in a large frying pan over medium heat until it reaches 350°F (175°C).

Cooking

  • Carefully place a few pies in the hot oil, frying them for 2-3 minutes on each side or until golden brown.
  • Remove them and place them on paper towels to drain excess oil.

Serving

  • Dust with powdered sugar if desired, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for about 3 days. For longer storage, freeze pies on a baking sheet, then transfer to a freezer-safe bag or container. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes.
