For the galette

  • 1 pie crust 1 pre-made pie crust (store-bought or homemade) Use a pre-made crust for convenience or make your own.
  • 2-3 medium-sized 2-3 medium-sized potatoes, thinly sliced Use thinly sliced potatoes for even cooking.
  • 1 cup 1 cup shredded cheese (Gruyère or cheddar) Feel free to experiment with different cheese types.
  • 1/2 cup 1/2 cup fresh chives, chopped Chop chives for freshness and flavor.
  • 1 tablespoon 1 tablespoon olive oil Used for sautéing the potatoes.
  • to taste Salt and pepper Season according to your preference.
  • 1 egg 1 egg, beaten (for egg wash) Provides a glossy finish.

Preparation

  • Lay the pre-made pie crust on a parchment-lined baking sheet or roll out your homemade crust to about 1/8-inch thickness.
  • In a skillet, heat olive oil over medium heat. Add the thinly sliced potatoes, seasoning with salt and pepper, and sauté for about 5-8 minutes until they start to soften.

Assembly

  • Spread the sautéed potatoes on the center of the crust, leaving a 1-2 inch border.
  • Sprinkle the shredded cheese and chopped chives over the potatoes.
  • Gently fold the edges of the crust over the filling, leaving the center exposed.
  • Brush the crust with the beaten egg for a glossy finish.

Baking

  • Preheat the oven to 400°F (200°C) and bake the galette for 25-30 minutes until the crust is golden brown and the cheese is bubbly.
  • Allow the galette to cool for a few minutes before slicing and serving.

Notes

Store leftovers in the refrigerator for up to 3 days, or freeze unbaked galette for up to 2 months. Reheat at 350°F (175°C).
