- Zest of 1 lemon
- 3 large eggs
- 1/2 cup granulated sugar
- 6 tablespoons unsalted butter or dairy-free alternative, cubed
- For the Cookie Base
- 1 cup gluten-free all-purpose flour blend with xanthan gum
- 1/4 cup almond flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter or dairy-free alternative, softened
- 1 teaspoon vanilla extract
- Pinch of salt
