  • 1 large head cauliflower, chopped into florets
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 teaspoon grated turmeric (or 1/2 teaspoon of turmeric powder)
  • 4 cups vegetable broth
  • 1 cup coconut milk for creaminess
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • to taste fresh cilantro or parsley, for garnish

Preparation

  • Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
  • Toss in the garlic, ginger, and turmeric, stirring until fragrant, around 1-2 minutes.
  • Add the cauliflower florets into the pot and stir until coated with the aromatic mixture. Let it cook for about 3-4 minutes.
  • Pour in the vegetable broth and bring the mixture to a gentle boil. Cover the pot and let it simmer for about 15 minutes, or until the cauliflower is tender.
  • Using an immersion blender (or carefully transferring to a stand blender), blend the soup until smooth and creamy.
  • Stir in the coconut milk, adjusting the seasoning with salt and pepper to your liking.
  • Garnish with fresh herbs or any toppings of your choice, and enjoy your warm bowl of happiness!

Notes

Fresh ginger and turmeric are recommended for the best flavor. Experiment with toppings like chili flakes, roasted chickpeas, or yogurt.
