Pasta Ingredients

  • 8 oz Pasta (preferably penne or rigatoni)

Sauce Ingredients

  • 2 tablespoons Extra virgin olive oil
  • 3 cloves Garlic, minced
  • 1 teaspoon Red pepper flakes (adjust to taste)
  • ½ cup Heavy cream Can substitute with coconut cream for a lighter option
  • 2 tablespoons Tomato paste
  • ½ cup Parmesan cheese, grated Use vegetarian variant if needed
  • ¼ cup Fresh parsley, chopped For garnish
  • to taste Salt and black pepper

Instructions
 

Cooking the Pasta

  • Boil a pot of salted water and cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside, reserving about ½ cup of the pasta water.

Preparing the Sauce

  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes and sauté for about 1 minute until fragrant.
  • Stir in the tomato paste and cook for an additional minute.
  • Pour in the heavy cream and mix well, allowing it to bubble gently for 2 minutes.

Combining and Serving

  • Add the cooked pasta to the skillet and toss to coat in the sauce. If too thick, gradually add reserved pasta water.
  • Stir in the grated Parmesan cheese until melted and creamy.
  • Season with salt and black pepper to taste, then sprinkle fresh parsley on top before serving.
  • Serve hot and enjoy!

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the microwave or on the stovetop with a splash of water.
