  • 2 lbs beef stew meat, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 cup sour cream
  • to taste salt and pepper

  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Season the beef with salt and pepper, then add to the pot, browning it on all sides. This should take about 5-7 minutes.
  • Once the beef is browned, add the onions and garlic to the pot. Sauté for another 3-4 minutes until the onions become translucent.
  • Stir in the beef broth, tomato paste, paprika, and thyme. Bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes until the beef is fork-tender.
  • Once the beef is tender, remove the pot from heat and slowly stir in the sour cream until fully combined and creamy.
  • Garnish with fresh parsley before serving this delicious creamy goulash with rice or noodles, or enjoy it on its own!

Notes

For added depth of flavor, add a splash of beef broth during the simmering stage. Substituting yogurt for sour cream can provide a tangy twist. Ensure the beef is well-browned to enhance flavor. Store leftovers in an airtight container for up to three days.
