Ingredients
  

  • 1 lb baby potatoes red or gold, halved
  • 1 cup baby carrots or sliced regular carrots
  • 1 cup fresh green beans trimmed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the halved baby potatoes, baby carrots, and fresh green beans.
  • Drizzle with olive oil and sprinkle with salt, pepper, garlic, thyme, and rosemary.
  • Toss until the vegetables are evenly coated.
  • Spread the vegetables in a single layer on a baking sheet.
  • Roast in the preheated oven for about 25-30 minutes, or until the veggies are golden brown and crisp-tender, tossing halfway through.
  • Remove from the oven and serve warm.
