Garlic Butter Shrimp and Broccoli Rice

Ingredients
  

For the shrimp

  • 1 pound shrimp, peeled and deveined Fresh shrimp for best taste.
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

For the broccoli rice

  • 2 cups broccoli rice (fresh or frozen) If using fresh, pulse in a food processor. If frozen, thaw and drain.

Preparation

  • Prepare the broccoli rice by pulsing fresh broccoli in a food processor until it resembles rice or thawing frozen broccoli rice.

Cooking

  • In a large skillet, melt 2 tablespoons of butter over medium heat.
  • Add the shrimp and season with paprika, salt, and pepper. Cook for about 3-4 minutes or until shrimp turn pink and opaque.
  • Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  • Push the shrimp to one side of the skillet and add the broccoli rice to the other side. Pour in the remaining butter and sauté until the broccoli is heated through, about 3-5 minutes.
  • Squeeze fresh lemon juice over the shrimp and broccoli rice mixture. Toss everything together and cook for another minute to combine the flavors.
  • Remove from heat and garnish with freshly chopped parsley. Serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in a microwave or skillet.
