  • 1 pound sea scallops Look for dry scallops for best flavor.
  • 4 tablespoons unsalted butter Divide into two tablespoons for cooking and two for adding later.
  • 4 cloves garlic, minced Fresh garlic will enhance the flavor.

  • for garnish Fresh parsley, chopped Adds freshness and color.

Preparation

  • Pat dry the scallops with paper towels to get a beautiful golden sear.
  • Season both sides of the scallops with salt and pepper.

Cooking

  • In a large skillet over medium-high heat, melt 2 tablespoons of butter.
  • When the butter is sizzling, add the scallops. Sear for about 2-3 minutes on each side until golden brown. Don't overcrowd the pan.
  • After flipping, add the minced garlic and the remaining butter, letting it melt into the pan. Cook for another 1-2 minutes.
  • Remove scallops from the pan and place them on plates. Drizzle the buttery garlic sauce over them, and garnish with chopped parsley. Serve immediately with lemon wedges.

Notes

Choose quality scallops, don’t crowd the pan, and be careful with timing to avoid chewy scallops. Substitute fresh parsley with chives or basil if needed. Store leftovers in an airtight container for up to 2 days and reheat gently.
