  • 8 oz pasta (fettuccine or penne) Choose your preferred type.
  • 2 tablespoons unsalted butter For sautéing.
  • 4 cloves garlic, minced Add flavor.
  • 12 oz Italian sausage, casings removed Can substitute with chicken or turkey sausage.
  • 1 cup heavy cream Adjust for desired creaminess.
  • 1 cup grated Parmesan cheese For topping.
  • to taste Salt and pepper For seasoning.
  • Fresh parsley for garnish (optional) Enhances presentation.

Instructions
 

Cooking the Pasta

  • Begin by bringing a large pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente.
  • Reserve 1/2 cup of pasta water, then drain and set aside.

Sautéing the Sausage

  • In a large pan over medium heat, melt the butter.
  • Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  • Add the Italian sausage to the pan, breaking it up with a spoon.
  • Cook until browned and cooked through, about 4-5 minutes.

Creating the Sauce

  • Lower the heat and stir the heavy cream into the sausage mixture.
  • Bring it to a gentle simmer and let it cook for 2-3 minutes until slightly thickened.

Combining and Serving

  • Add the drained pasta to the sauce along with the reserved pasta water.
  • Mix until the pasta is well coated.
  • Stir in the grated Parmesan cheese, and season with salt and pepper to your taste.
  • If desired, garnish with freshly chopped parsley before serving.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat gently with a splash of cream or milk.
