  • 1 medium head medium head of cauliflower, cut into florets
  • 1 pound fresh mushrooms (e.g. cremini or button), sliced
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley (for garnish)

Preparation

  • Begin by washing and cutting the cauliflower into bite-sized florets.
  • In a large skillet, melt 2 tablespoons of butter over medium heat.
  • Add the sliced mushrooms and cook for about 5-7 minutes until they are golden and tender.
  • Toss in the cauliflower florets along with the minced garlic, salt, and pepper. Mix well to combine.
  • Cover the skillet and let the vegetables cook for about 10-12 minutes, stirring occasionally.
  • Once the vegetables are cooked, stir in the remaining 2 tablespoons of butter, allowing it to melt and coat everything in the skillet.
  • Garnish with freshly chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stove over low heat or in the microwave, being careful not to overcook.
