Ingredients
  

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 8 oz pasta e.g., fettuccine or spaghetti
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Parsley for garnish optional

Instructions
 

  • In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant.
  • Add chicken pieces to the skillet, season with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes.
  • While the chicken cooks, boil water in a separate pot and cook the pasta according to package directions. Drain and set aside.
  • Once the chicken is cooked, remove from skillet and set aside.
  • In the same skillet, lower the heat and add the heavy cream and remaining 2 tablespoons of butter. Stir until melted and combined.
  • Add the Parmesan cheese, stirring until melted and smooth.
  • Add the cooked pasta and chicken back into the skillet, tossing to coat.
  • Garnish with parsley if desired and serve immediately.
