Fudgy Cosmic Brownie Cookies

Ingredients
Wet Ingredients
- 1 cup unsalted butter (melted) Ensure butter is melted and cooled slightly for a fudgy texture.
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs Use room-temperature eggs for better mixing.
- 2 teaspoons vanilla extract
Dry Ingredients
- 1 cup all-purpose flour Can substitute with almond flour for a nutty flavor.
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Mix-Ins
- 1 cup semi-sweet chocolate chips
- 1/2 cup colorful sprinkles Optional, for topping.
Instructions
Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the melted unsalted butter, granulated sugar, and brown sugar. Mix until smooth and creamy.
- Crack in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring just until combined. Avoid over-mixing. Fold in the semi-sweet chocolate chips.
- Using a cookie scoop or two spoons, drop rounded dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- If desired, sprinkle colorful sprinkles on top of each cookie before baking.
Baking
- Place the baking sheet in the oven and bake for 12-15 minutes, until the edges appear set but the centers are still slightly soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
To keep cookies fresh, store in an airtight container at room temperature for up to 5 days. Can refrigerate for up to a week or freeze for up to 3 months. To reheat, microwave for 10 seconds or warm in the oven at 350°F (175°C) for 5-7 minutes.
