  • 1 cup crushed taco shells Use small, bite-sized pieces.

For the Cheesecake Filling

  • 3 cups cream cheese, softened Ensure it is at room temperature for easy mixing.
  • 1 cup powdered sugar Adjust according to your sweetness preference.
  • 1 teaspoon vanilla extract For added flavor.
  • 1 cup whipped cream Lightly folded into the mixture.
  • 2 cups Fruity Pebbles cereal Reserve some for topping.

Optional Topping

  • to taste chocolate syrup For drizzling on top.

Preparation

  • Start by carefully crushing the taco shells into small, bite-sized pieces. You want them to be crunchy but easy to scoop.
  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add the powdered sugar, mixing well until fully incorporated.
  • Stir in the vanilla extract for extra flavor.
  • Gently fold the whipped cream into the cheesecake mixture until smooth and fluffy.
  • Fold in 1 cup of Fruity Pebbles into the cheesecake filling.

Assembly

  • Using a spoon or piping bag, fill each taco shell with the cheesecake filling generously.
  • Sprinkle the remaining Fruity Pebbles on top of each filled taco.
  • If desired, drizzle chocolate syrup on top.

Chilling

  • Place the assembled tacos in the refrigerator for about 10–15 minutes to chill before serving.

Notes

Enjoy these tacos chilled for the best experience. Store leftovers in an airtight container in the fridge for up to 2 days, ideally eat within a day. Reheating is not recommended.
