  • 8 ounces pasta (your choice, but fusilli or bowties work splendidly)
  • 1.5 cups fresh strawberries, hulled and halved
  • 1 cup fresh mozzarella balls (bocconcini), halved
  • 0.5 cup fresh basil leaves, roughly torn
  • 0.25 cup balsamic glaze
  • 2 tablespoons extra virgin olive oil
  • to taste salt and pepper

Preparation

  • Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, approximately 8-10 minutes.
  • Drain the pasta and rinse under cold water to stop the cooking process.
  • In a large bowl, combine the cooked pasta, halved strawberries, mozzarella balls, and fresh basil. Toss gently to mix.
  • In a small bowl, whisk together the balsamic glaze, olive oil, and a pinch of salt and pepper. Pour the dressing over the salad and toss again to coat evenly.
  • Let the salad sit for about 5 minutes to allow the flavors to mingle, and then serve it up!

Notes

For best results, choose quality ingredients. Store leftovers in an airtight container for up to 2 days. You can freeze the salad without dressing for about a month.
