  • 3 pieces ripe peaches, diced Ensure the peaches are ripe for maximum sweetness and flavor.
  • 1 small red bell pepper, diced
  • 1 small yellow onion, finely chopped
  • 1 piece jalapeño, minced (optional for spice) Optional for spice.
  • 0.5 cup fresh cilantro, chopped
  • 1 piece lime, juiced
  • Salt, to taste

Preparation

  • Wash the peaches thoroughly. Pat them dry and dice into small cubes.
  • Dice the red bell pepper and finely chop the onion. Mince the jalapeño for an added kick, if desired.
  • In a medium-sized mixing bowl, combine the diced peaches, red bell pepper, onion, jalapeño (if using), and chopped cilantro.
  • Squeeze the juice of one lime over the mixture and add salt to taste.
  • Gently toss all the ingredients until well combined, being careful not to mush the peaches.
  • Let the salsa sit for about 10-15 minutes to allow the flavors to meld, or refrigerate for a couple of hours for a more intense flavor.

Notes

For a different twist, try using mango instead of peaches. Make the salsa a few hours ahead of serving for the best flavor. Avoid over-mixing to maintain the texture of the peaches. Store in an airtight container in the refrigerator for up to 3 days, or freeze for up to a month.
