Ingredients
  

For the crust

  • 1 cup all-purpose flour For the crust base

For the lemon filling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a baking dish by greasing it lightly or lining it with parchment paper.
  • In a bowl, cream together the softened butter and 1/2 cup of sugar until fluffy.
  • Gradually combine the flour and baking powder into the mixture until a crumbly dough forms.
  • Press about two-thirds of the mixture evenly into the bottom of the prepared baking dish.

Make the Lemon Filling

  • In another bowl, whisk together the eggs, remaining sugar, lemon juice, lemon zest, and a pinch of salt until thoroughly mixed.
  • Pour this mixture over the crust in the baking dish.

Bake and Cool

  • Crumble the reserved crust mixture over the lemon filling.
  • Bake in the preheated oven for approximately 20-25 minutes or until the top is golden brown and the center is set.
  • Allow to cool in the dish before slicing into squares. Dust with powdered sugar if desired.

Notes

For best flavor, use fresh lemons for juicing. Allow bars to chill completely before cutting for cleaner slices. Store leftovers in an airtight container in the refrigerator for 3-4 days.
