Ingredients
  

Soup Base

  • 1 pound pearl onions, peeled
  • 2 tablespoons butter For sautéing onions
  • 4 cups beef or vegetable broth Vegetable broth can be used for a vegetarian option
  • 1/2 cup dry white wine
  • 1 teaspoon fresh thyme
  • to taste Salt and pepper

Cheesy Baguette Topping

  • 1 baguette sliced
  • 1 cup grated Gruyère cheese Can substitute with Swiss or Fontina cheese

Instructions
 

Preparation

  • In a pot, melt butter over medium heat. Add the pearl onions and sauté until they are golden brown.
  • Add the broth, white wine, thyme, salt, and pepper. Bring to a simmer and let it cook for 20 minutes.

Baguette Topping

  • Preheat the oven to broil.
  • Place the baguette slices on a baking sheet, top with Gruyère cheese, and broil until the cheese is bubbly and golden.

Serving

  • Serve the soup hot, topped with the cheesy baguette.

Notes

For a deeper flavor, sauté the onions until caramelized. Store leftovers in an airtight container in the refrigerator for up to three days.
