  • 4 cups low-sodium chicken broth
  • 1 cup shredded cheese (Swiss or Gruyère recommended)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon thyme (fresh or dried)
  • 1 teaspoon garlic powder

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced onions, a pinch of salt, and cook, stirring occasionally, until the onions are soft and golden brown (about 15-20 minutes).
  • In the same skillet, add the chicken pieces, garlic powder, thyme, salt, and pepper, and cook until the chicken is no longer pink (about 5-7 minutes).
  • In a large mixing bowl, combine the caramelized onions, cooked chicken, orzo, and chicken broth. Mix well until everything is evenly coated.
  • Transfer the mixture to the prepared baking dish. Top with shredded cheese, cover with foil, and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
