  • 1 cup long-grain rice (white or brown)
  • 2 cups vegetable broth (or water)
  • 2 medium onions, thinly sliced
  • 4 tablespoons unsalted butter divided
  • 2 tablespoons olive oil
  • to taste Salt
  • for garnish Fresh thyme or parsley optional

Instructions
 

Cooking the Onions

  • In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat.
  • Add the thinly sliced onions and a pinch of salt.
  • Stir occasionally, allowing the onions to caramelize for about 15-20 minutes, until golden brown and soft.

Preparing the Rice

  • Once the onions are caramelized, add in the uncooked rice.
  • Stir for about 2 minutes until the rice is slightly toasted.

Adding the Broth

  • Pour in the vegetable broth, bring to a boil.
  • Once boiling, cover with a lid, reduce heat to low, and let it simmer according to the rice package instructions (about 15-20 minutes).

Finishing Touches

  • Once the rice is cooked and all the liquid is absorbed, remove the skillet from heat.
  • Stir in the remaining 2 tablespoons of butter until melted and fluffy.

Garnishing and Serving

  • Add some fresh thyme or parsley to elevate your dish.
  • Give it a final stir, and your French Onion Butter Rice is ready to be served!

Notes

Leftover French Onion Butter Rice can be stored in an airtight container in the refrigerator for about 3 days. To reheat, add a splash of broth or water and heat in a skillet over low heat.
