Ingredients
  

For the Macaron Shells

  • 1 cup almond flour Use finely ground almond flour for best results.
  • 1 3/4 cup powdered sugar Sifted to prevent lumps.
  • 3 large egg whites At room temperature.
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • Food coloring (optional) To achieve desired color.

For the Filling

  • Filling of choice (buttercream, ganache, jam, etc.) Choose according to your preference.

Preparation

  • Line your baking sheets with parchment paper and optionally draw circles as a guide for uniform sizes.
  • In a bowl, whisk together the almond flour and powdered sugar until no lumps remain.
  • In a clean bowl, whip the egg whites until foamy. Gradually add in granulated sugar and cream of tartar, whipping until stiff peaks form. If desired, add food coloring and mix gently.
  • Gently fold the dry ingredients into the whipped egg whites using a spatula until reaching a lava-like consistency.
  • Transfer the mixture into a piping bag fitted with a round tip and pipe even-sized rounds onto the baking sheets. Tap the sheets to release air bubbles.
  • Allow piped macarons to sit at room temperature for 30-60 minutes until a skin forms.

Baking

  • Preheat your oven to 300°F (150°C) and bake for 15-20 minutes. Let them cool completely before removing.

Filling and Assembly

  • Once cool, pair similar-sized shells, pipe your desired filling onto one shell, and gently join them with another.

Notes

For best results, use fresh ingredients and a food scale for precise measurements. Store leftovers in an airtight container in the fridge for up to 5 days or freeze between parchment paper layers for up to 3 months.
