Preparation

  • In a mixing bowl, whisk together the flour, cornmeal, baking powder, salt, and paprika until combined.
  • Carefully pour in the cold sparkling water and stir until the mixture reaches a smooth consistency.
  • Pat the fish fillets dry using paper towels to help the batter stick better.

Cooking

  • Heat oil in a deep frying pan or pot over medium-high heat. Drop a small amount of batter into the oil; if it sizzles, the oil is ready.
  • Dip each fillet into the batter, ensuring both sides are well coated.
  • Gently place the battered fish fillets into the hot oil and fry in batches if necessary, cooking for about 4-5 minutes on each side or until golden brown and crispy.
  • Use a slotted spoon to remove the fish from the oil and let them drain on a paper towel-lined plate.

Notes
