For the cookies

  • 1 cup fresh peaches (diced) Use fresh, ripe peaches for the best flavor.
  • 1/2 cup granulated sugar Adjust based on the ripeness of peaches.
  • 1/2 cup unsalted butter (softened) Ensure butter is at room temperature.
  • 1 large egg Add to the mixture to bind the ingredients.
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • a pinch salt Enhances the overall flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine diced peaches with granulated sugar and let sit for about 10 minutes.
  • In another bowl, cream softened butter with remaining sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Gently fold in the prepared peaches.

Baking

  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  • Bake for about 10-12 minutes or until lightly golden.
  • Let cookies cool for a few minutes on the baking sheet, then transfer to a wire rack to finish cooling.

Notes

For the best flavor, use fresh ripe peaches. If out of season, canned peaches can be substituted but must be drained well. Store cookies in an airtight container at room temperature for 3-5 days or refrigerate for up to a week.
