Ingredients

  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup milk
  • 1 tablespoon honey or maple syrup
  • 1 large egg Room temperature is best

Preparation

  • In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
  • In another bowl, combine the Greek yogurt, milk, honey (or maple syrup), and the egg. Whisk until the mixture is creamy and smooth.
  • Gradually add the wet mixture to the dry mixture, stirring until just combined. Be careful not to over-mix; a few lumps are perfectly okay!
  • Gently fold in the blueberries to the batter.

Cooking

  • Preheat a non-stick skillet or griddle over medium heat and lightly grease with oil or cooking spray.
  • Pour about 1/4 cup of batter for each pancake onto the hot skillet. Cook until bubbles form on the surface, then flip and cook for an additional minute or until golden brown.
  • Stack pancakes high, drizzling them with more honey or maple syrup if desired, and enjoy!

Notes

Use room temperature ingredients for even cooking. Don’t over-stir to keep pancakes fluffy. You can experiment with toppings like yogurt or fresh fruit.
