Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • a pinch salt

Wet Ingredients

  • 1 cup buttermilk (or milk with a splash of vinegar)
  • 1 large egg
  • for frying Butter or oil

Preparation

  • In a mixing bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together the buttermilk and egg until fully combined.
  • Gradually pour the wet mixture into the dry ingredients while gently folding until just combined.
  • On medium heat, melt some butter or oil in a non-stick skillet.
  • Pour about 1/4 cup of batter onto the skillet for each pikelet. Cook for 2-3 minutes or until bubbles form on the surface and edges are set, then flip and cook for another 1-2 minutes until golden brown.
  • Transfer cooked pikelets to a plate and keep warm while repeating with remaining batter.
  • Serve warm with your favorite toppings.

Notes

For perfect pikelets, avoid overmixing the batter, watch for bubbles as a flipping indicator, and ensure a hot skillet for the best golden crust. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 1 month.
