Ingredients
  

Muffin Batter

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar (divided) Divided into two portions: ¾ cup for the batter and ¼ cup for coating.
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon (for the muffin batter)
  • 2 large eggs
  • 0.75 cups milk
  • 0.5 cups vegetable oil
  • 1 teaspoon vanilla extract

Cinnamon Sugar Topping

  • 2 tablespoons ground cinnamon
  • 0.25 cups melted butter (for coating)

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them well.
  • In a large mixing bowl, whisk together the all-purpose flour, ¾ cup granulated sugar, baking powder, baking soda, salt, and 1 teaspoon of ground cinnamon until well mixed.
  • In another bowl, beat the two large eggs and then whisk in the milk, vegetable oil, and vanilla extract until fully combined.
  • Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay!
  • Use a spoon or ice cream scoop to fill each muffin cup about ¾ full.

Baking

  • Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until golden brown. A toothpick should come out clean when inserted into the center of a muffin.

Cinnamon Sugar Coating

  • While muffins cool slightly, melt butter in a bowl. In another bowl, mix the remaining ¼ cup of sugar and 2 tablespoons of cinnamon.
  • Once the muffins are slightly cool, dip the tops in melted butter and then roll them in the cinnamon-sugar mixture.

Serving

  • Let the muffins cool completely on a wire rack, and then serve them warm or at room temperature. Enjoy!

Notes

To keep muffins fresh, store in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for about a week, or freeze for up to 3 months. Reheat in the microwave for about 10-15 seconds or in a 350°F oven for a few minutes to regain freshness.
