  • 1 Potato, peeled and diced To absorb flavors and add heartiness.
  • 1 Carrot, diced A touch of sweetness.
  • 1/2 cup Green Olives, sliced For a briny kick.
  • 1 tsp Cumin For warmth.
  • 1 tsp Chili Powder For a little heat - adjust to taste.

Preparation

  • Chop your onion, garlic, bell pepper, tomato, potato, carrot, and olives.

Cooking

  • In a large skillet, heat 2 tablespoons of cooking oil over medium heat. Add the diced onion and minced garlic, sautéing for about 3-4 minutes until fragrant and golden.
  • Add 1 pound of ground beef to the skillet. Break it up with a spatula and cook until browned all over, about 5-7 minutes.
  • Stir in the diced bell pepper, tomato, potato, carrot, and green olives. Mix thoroughly and sauté together with the beef for about 5 more minutes.
  • Sprinkle in the cumin, chili powder, salt, and pepper. Mix well to ensure even coating of spices.
  • Add a small splash of water if needed, cover, and reduce heat to low. Allow to simmer for about 15 minutes, stirring occasionally until the potatoes are tender.
  • Once cooked through, serve hot over rice or in corn tortillas, garnished with fresh cilantro or avocado slices.

Notes

For a healthier option, consider using lean ground turkey or chicken instead of beef, and substitute veggies on hand. Store leftovers in airtight containers in the fridge for 3-4 days or freeze for up to 3 months.
