Ingredients
  

Marinade

  • 1 can (13.5 oz) coconut milk Use full fat for creaminess.
  • 3 cloves garlic (minced)
  • 1 tablespoon ginger (grated)

  • 1 tablespoon lime juice (freshly squeezed)

Chicken

  • 2 pounds chicken thighs (boneless and skinless)

Instructions
 

Marination

  • In a large mixing bowl, combine the coconut milk, minced garlic, grated ginger, soy sauce, lime juice, sugar, salt, and pepper. Mix well.
  • Add the chicken thighs, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 1 hour; marinating overnight is even better for flavor!

Grilling

  • About 15 minutes before grilling, preheat your BBQ grill to medium-high heat. If you’re using a charcoal grill, make sure the coals are glowing gray.
  • Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken thighs on the grill.
  • Grill for about 6-7 minutes on one side until nice grill marks appear. Flip and cook for an additional 5-6 minutes on the other side, or until the internal temperature reaches 165°F (75°C).

Garnishing

  • Once the chicken is cooked through, remove it from the grill. Allow it to rest for 5 minutes.
  • Garnish with fresh basil leaves and chopped peanuts if desired. Serve hot.
