Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onions and sauté until they are translucent, about 5 minutes.
  • Add the minced garlic and cook for an additional minute until fragrant.

Cooking

  • Add the chopped cauliflower and fennel, stir well with the onions and garlic for about 3-4 minutes.
  • Pour the vegetable broth into the pot and bring to a gentle boil.
  • Reduce the heat to a simmer and cook uncovered for about 15-20 minutes or until the cauliflower is tender.

Finishing Touch

  • Using an immersion blender, blend the soup until it’s creamy and smooth.
  • If using a regular blender, allow the soup to cool slightly, then blend in batches.
  • Taste the soup and season with salt and pepper as needed.
  • Ladle the soup into bowls and garnish with fresh herbs before serving.

Notes

For an extra creamy texture, consider adding a splash of coconut milk or cashew cream while blending. Experiment with different herbs like dill or a sprinkle of chili flakes for a hint of warmth. Using homemade or high-quality vegetable stock can greatly enhance the flavor.
