  • 4 pieces Cod fillets (about 6 oz each) Fresh or thawed
  • 1/2 cup Mayonnaise
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 tablespoon Lemon juice, freshly squeezed
  • 1 teaspoon Garlic powder
  • Salt and pepper To taste
  • Fresh parsley For garnish (optional)

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the cod fillets dry with a paper towel and place them in a greased baking dish.
  • In a bowl, combine mayonnaise, grated Parmesan, lemon juice, garlic powder, and a pinch of salt and pepper. Stir until well blended.
  • Spread the mixture evenly over the cod fillets.

Cooking

  • Bake in the preheated oven for about 15-20 minutes or until the cod is cooked through and flakes easily with a fork.
  • Ensure the topping is bubbly and golden brown.
  • Garnish with fresh parsley if desired, and serve!

Notes

To ensure a crispy topping, do not skip the drying step for the cod. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
