  • 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 medium zucchini, sliced into half-moons
  • 1 medium yellow squash, sliced into half-moons
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste salt
  • to taste pepper
  • 1 teaspoon lemon juice (optional)
  • to taste fresh herbs like basil or parsley for garnish

Preparation

  • Start by washing the asparagus, zucchini, and squash. Trim the ends off the asparagus and slice the zucchini and squash into half-moons.

Cooking

  • In a large skillet, heat the olive oil over medium heat until shimmering.
  • Add the minced garlic to the pan and sauté for 30 seconds until fragrant.
  • Toss in the asparagus pieces. Cook for about 3-4 minutes until they start to turn bright green.
  • Now, add the zucchini and squash. Continue to sauté for another 5-7 minutes, stirring occasionally until everything is tender but still crisp.
  • Season your vegetable medley with salt, pepper, and, if desired, a squeeze of lemon juice for a splash of freshness.
  • Remove from heat, garnish with fresh herbs, and serve warm.

Notes

For a perfect dish, choose fresh vegetables and avoid overcooking to retain their vibrant colors and crunch. You can also substitute with seasonal veggies.
