Broth

  • 4 cups chicken or vegetable broth
  • 2 cups water

Vegetables

  • 1 cup bok choy, chopped
  • 1 cup carrots, diced
  • 1 cup mushrooms, sliced

Flavorings

  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp ginger, minced
  • 2 cloves garlic, minced

Garnish

  • Chopped scallions
  • Fresh cilantro (optional)

Preparation

  • In a large pot, combine the chicken or vegetable broth with water. Bring to a gentle boil over medium heat.
  • Once the broth is boiling, stir in the minced ginger and garlic. Sauté for a minute until fragrant.
  • Add chopped bok choy, diced carrots, and sliced mushrooms to the broth. Let the mixture simmer for about 5 minutes, until the vegetables have softened.
  • Carefully drop the dumplings into the soup. Allow them to cook according to package instructions, usually about 5-7 minutes, until they float to the surface, indicating they’re done.
  • Stir in the soy sauce and sesame oil. Taste the soup and adjust seasoning as needed.
  • Remove the pot from heat and ladle the soup into bowls. Top with chopped scallions and, if desired, fresh cilantro.
