  • 1 pound ground beef (or your favorite alternative)
  • 1/2 cup breadcrumbs
  • 1/4 cup minced green onions
  • 1/4 cup grated carrot
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon honey
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the ground beef, breadcrumbs, minced green onions, grated carrot, minced garlic, sesame oil, soy sauce, gochujang, honey, salt, and pepper.
  • Mix all the ingredients until well combined. You can use your hands or a spoon—whichever works best for you!
  • Form the mixture into meatballs, roughly 1 inch in size, and place them on a baking sheet lined with parchment paper.

Cooking

  • Bake the meatballs for 15-20 minutes or until they are browned and cooked through.
  • While they are baking, prepare the sauce by combining extra gochujang, honey, and soy sauce in a bowl for drizzling later.
  • Once cooked, toss the meatballs in the prepared sauce for an extra flavor kick!

Serving

  • Serve hot and enjoy!

Notes

Be mindful of moisture: If your preparation feels too wet, adjust with more breadcrumbs; if it’s too dry, add a splash more of soy sauce or sesame oil. Try adding spices like ginger or chopped bell peppers for different flavor profiles. Don't overcook; they are best when just cooked through and tender. Prepare extra meatballs and freeze them before cooking! They save perfectly for a quick future meal.
