  • 1/2 cup nut butter (peanut or almond) You can use a nut-free alternative if needed.
  • 1/3 cup honey or maple syrup Maple syrup can be used for a vegan option.
  • 1/4 cup mini chocolate chips You can use any mix-ins of your choice.
  • 1 teaspoon vanilla extract

Preparation

  • Gather your ingredients: Start by measuring out all the ingredients. It helps to have everything ready before you mix!
  • In a medium bowl, combine the rolled oats, nut butter, honey (or maple syrup), chocolate chips, and vanilla extract.
  • Use a spatula or your hands to mix everything until it forms a sticky dough. If it feels too dry, add a little more nut butter or honey.
  • With clean hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
  • Place the energy bites on a baking sheet lined with parchment paper and chill in the fridge for about 30 minutes to set.
  • Once chilled, enjoy your homemade energy bites! Store any leftovers in an airtight container in the fridge.

Notes

These energy bites can be stored in an airtight container in the refrigerator for up to a week or frozen for longer storage. No reheating is necessary.
