  • 1 medium head cabbage, chopped
  • 2 large carrots, diced
  • 1 large bell pepper, chopped (any color)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 6 cups vegetable broth
  • 2 teaspoons olive oil
  • to taste salt and pepper
  • fresh herbs like parsley or thyme for garnish (optional)

Preparation

  • Start by chopping your veggies and gathering all your ingredients. It makes the cooking process smoother!

Cooking

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until they are fragrant and soft, about 3-5 minutes.
  • Toss in the bell pepper, carrots, and chopped cabbage. Sauté for another 5 minutes, stirring occasionally until the cabbage starts to wilt.
  • Pour in the can of diced tomatoes (with their juice) and add the vegetable broth. Stir everything together, and bring it to a simmer.
  • Once simmering, add salt and pepper to taste. Let the soup cook for about 20-25 minutes or until the vegetables are tender.
  • If you want some extra freshness, garnish with chopped parsley or thyme before serving. Enjoy it hot!

Notes

Store any leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze the soup for up to three months. When reheating, stir occasionally for even heating.
