  • 1 pound meat (such as chicken or beef)
  • 4 cups apple cider
  • 2 cups diced potatoes
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons thyme, dried or fresh
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil
  • optional fresh parsley for garnish

Preparation

  • Wash and cut your vegetables: dice the potatoes, slice the carrots, chop the celery, and mince the garlic.
  • In a large pot, heat the olive oil over medium heat. Add the onions and garlic, cooking until the onions are translucent, about 3-4 minutes.
  • Add the meat to the pot, browning it for about 5 minutes on all sides.
  • Toss in the diced potatoes, carrots, and celery. Stir well to incorporate all the ingredients.
  • Carefully pour in the apple cider, scraping the bottom of the pot to release any flavorful bits.
  • Add thyme, salt, and pepper. Bring to a boil, then reduce to low heat and let it simmer for about 30 minutes or until vegetables are tender and the meat is cooked through.
  • Use a potato masher to blend some of the potatoes and vegetables in the pot for a creamy consistency while leaving some chunks.
  • Spoon the stew into bowls, garnish with parsley if desired, and enjoy!

Notes

Feel free to substitute vegetables as desired, adjust the stew's thickness by mashing more or less of the potatoes. Consider adding a bay leaf while simmering for extra flavor, removing it before serving.
