Fajita Chicken Casserole

- 4 cups shredded cooked chicken about 3 large breasts
- 2 cups instant rice
- 1 10.5-ounce can cream of chicken soup
- 1 cup bell peppers sliced
- 1 cup onion sliced
- 1 cup shredded cheese cheddar or Mexican blend
- 1 tablespoon fajita seasoning
- Salt and pepper to taste
In a large mixing bowl, combine the shredded chicken, instant rice, cream of chicken soup, sliced bell peppers, sliced onion, fajita seasoning, salt, and pepper. Mix well.
Spread the mixture evenly in a greased 9x13 inch baking dish.
Top with shredded cheese.
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
